(Serves 4)
8 Rib Chops or Loin Chops (about 1 1/4" thick)
2 TBS. Olive oil
4 cloves garlic - peeled and halved lengthwise
2 TBS. fresh or 2 tsp. dried rosemary (crushed)
Salt and Fresh ground pepper
- Preheat gas grill, set rack in place, cover with grill lid, and let rack heat up at least 5 minutes OR preheat broiler and let broiler pan heat up at least 5 minutes.
- Rub chops all over with olive oil then garlic. Sprinkle with salt, fresh ground pepper, and crushed rosemary.
- Grill over hot fire, turning once. Grill about 5 minutes per side for rare; 6 minutes per side for medium rare. OR Broil under a high fire for the same amount of time, turning once.
