Pasture-fed Lamb

All of our pasture-fed lamb is raised without growth hormones or antibiotics, in fresh air, on our organically managed pastures. The lambs are allowed to grow slowly, eating wholesome, healthy forage. As a result, their meat is sweet and mildly flavored, the texture is fine-grained, and every cut is lean and good for you.

Leg of Lamb

This leg of lamb is an elegant main course for a dinner with guests, and it’s simple enough to prepare for a weekday meal. Ours is especially lean and tender, so it is perfect for roasting or grilling. The Kebab cubes are our choice for curries or stir fries.

Whole leg (bone-in; approx. 5-7 lbs.)

Rib Chops or Rack of Lamb

Our rib chops are lean and flavorful so they require little more than a sprinkling of your favorite seasoning. You can cook them in minutes on the grill or under the broiler. The chops are cut 1 ¼” thick; plan on 2 per serving. The rack is trimmed and ready for your favorite recipe.

Loin Chops or Loin Roast

These loin chops resemble miniature T-bone steaks, but leaner, and with a delicate lamb flavor. You can purchase them in packs of 4 chops (1 ¾” thick) or as a roast (with the bone pre-cut to make carving a breeze). Whether grilled, broiled, pan-fried or roasted, you will have an easy-to-make, delicious feast.

Ground Lamb

There are so many uses for this delicious ground lamb that you will have a difficult time deciding what to try first. Lean, moist, and tender, it can be used to make delicious Greek-style meatballs or burgers, in a meat sauce for pasta, as the basis for a healthy chili, for stuffing your favorite vegetable, or in the traditional shepherd’s pie. Especially good for young children because it is so mild and palatable.

Shoulder

When the term “comfort food” is used, many of us think about the great lamb dishes, stews, and casseroles we have been served. Because our shoulder is so lean and flavorful, it is the perfect cut for braising whole or cut up for one of your favorite stew recipes.

Lamb Shanks

Every great cook knows that lamb shanks can be the foundation of a delicious entrée. Ours are meaty and lean. Plan to braise them (cook slowly in liquid) with your favorite spices and vegetables, and spoon the wonderfully aromatic broth over couscous, polenta, rice, or pasta. A favorite in our family.

Lamb Sausage

Made with our lean, ground lamb; all-natural seasonings; natural casings; and no nitrites, our sausages are easy to prepare, delicious, and healthy—a winning combination. Gently sauté sausages (use a non-stick skillet or just a little olive oil because they are so lean) and serve with your favorite pasta, in pita bread, with a couple of lamb chops for a hunter’s plate, or treat your family to sausage and eggs for Sunday brunch. Each package contains approximately 1 lb of sausages.
